LeDomduvin: Ladies Wines




Ladies' wines


Last night, I had the pleasure to serve these beautiful wines to a table of Ladies, who enjoyed them very much (hence the title of this post) 😉😁👍🍷







Pretty proud of the little selection I made, as it went really well with the menu, and they were really pleased in the end. The only hiccup was the Chateau Haut-Brion 2016, which was way too young and tight, and only opened toward the end of the dinner, after nearly 3 hours of decanting. 

Fortunately for me, as, when I first served it, the host looked at me with those eyes saying out loud, yet without saying a word, how wrong it was of me to have chosen this particular wine in such a young vintage. And, if the wine did not open up at some point, the mood of the dinner and the host would have been seriously different. Phew...😅😅😅






2003 Dom Perignon Vintage Brut Rosé Champagne
Estimated retail price HKD 3,700  /  Euros 450  /  USD 472
At the opening, the nose was off-putting, sour and dusty, smelling almost like a sewer. It was weird. I pour myself a little bit to examine and taste it. Deep and intense pink salmon color, with ripe onion skin nuances. A few minutes later, the weird smell had vanished to give way to ripe strawberry and red berries aromas mingling with floral scents and limestone mineral hints. To my surprise the palate was much better than the nose, offering expressive flavors of red berries (raspberry, strawberry) and cherries, mixed with floral and mineral notes, nicely expanding from beginning to end, quite rich and substantial, yet with enough acidity to keep the focus and freshness in check. Well done.    

It was a nice surprise, I must say, as 2003 was a very warm, unprecedented hot vintage (I should say), characterized by a long summer heatwave that impacted most of the wine areas across France, resulting in some weird, unbalanced, and uncharacteristic wines in some regions, most notably Bordeaux (*). 

Consequently, I was happy to realize that there was still some acidity in this Dom Perignon 2003 Rosé to balance the ripeness of the fruit and bring some needed freshness/crispiness to keep the champagne focused and vibrant, thus preventing it from being dull and fat. A very interesting experience that taught me, once again, that time and wine are complexly intricated and indissociable and can make wonder together after a certain period of time, even in lesser vintages. 

This is the reason why I have always been very humble regarding my knowledge about wine, over my 30 years of career, as, you never know how surprisingly well a wine, that was originally or supposedly lesser or even mediocre, may evolve and become after many years in the bottle.

2015 Cos d'Estournel Bordeaux Blanc
Estimated retail price HKD 1,180  /  Euros 145  /  USD 150
Pale yellow color with green nuances. Intriguing tropical nose boasting aromas of exotic fruits (pineapple, citrus, mango) and white flowers, with some oaky notes (from the barrel aging). The palate is quite generous, ample, overall well balanced, and still rather young and fresh for a 2015 white Bordeaux. A pleasant surprise here again. (...)






2018 Bachelet-Monnot Puligny-Montrachet 1er Cru Hameau du Blagny Bourgogne
Estimated retail price HKD 590  /  Euros 72  /  USD 75
Same as last week. A delightful and sophisticated wine, racy, classy, elegant, delicate, and charming, yet ample with that glycerine sensation coating the whole palate from the beginning to the seamless long-lasting finish. Displaying a lot of buttery, popcorn notes, mingling with apple and yellow stone fruits, yellow flowers, and mineral hints. Can't get enough of it. Looooooooooove it. (...)






2016 Château Haut-Brion Pessac-Léognan Graves Bordeaux
Estimated retail price HKD 5,500  /  Euros 672  /  USD 700
It is a sacrilege to open a Haut-Brion so young. Nevertheless, it was interesting to check if it was really worth the 100pts it received by at least 5 wine critics including RP, JMQ, WE, JL, and AL. And... it is difficult to say. As the wine was so tight, it took more than 3 hours after decanting to reveal itself. (...)

Once again, last night, the restaurant was quite full, the energy was joyful and we opened some seriously good wines, here are some of the highlights of last night.

What a beautiful wine! The predominance of Sauvignon Blanc in the blend provides freshness, brightness, focus, incredible balance, and length. Aromas of honeysuckle mingle with citrus, yellow fruits, white and yellow flowers, as well as slightly herbal, vegetable notes. The palate is beautifully balanced, structured and textured, layered, generous and complex, yet light on its feet and elegant. Loooooove it.

This wine was amazingly good and still so youthful, I was very surprised and impressed. Lots of ripe dark and red cherry, mineral, generous and complex palate, great balance, full of life, and really smooth. Well integrated. Highly recommended.

I was a bit skeptical at first when seeing the condition of the label, and more especially the state of the cork, black and dirty on top, soft, soaked, and crumbling in the middle and at the base. Even the first smell inspired something rotten inside. The light brick/brownish color also revealed an advanced stage. However, the taste was ok, so, I served it, and to my surprise, it opened up after about 10 minutes and revealed some interesting aromatics: smoky earth, underbrush, dark fruits, leather, horse saddle, forest floor. The soft and light palate showed some fruits, good acidity, and structure. Fragile, but still very much alive. Surprising. Definitely, a must-taste.

Label in good condition. Light green bottle with thinner glass than I remembered and the punt also not as deep as I thought it would be, but still presenting some features from the 70s. I'm always careful when it comes to Lafite Rothschild, counterfeits are always a concern. The cork seemed correct, with expected dimensions and conditions. The nose presented some smokiness and earthiness the like of Haut-Brion, more than a Pauillac. Tasted very young too. Surprising here again. Fake? Maybe not... 

Most vintages of the 70s for Bordeaux wines being quite mediocre overall, I cannot help to think that, either 1978 is an extraordinary underrated vintage, which has somehow developed gracefully over the last decade, after being tight and closed all these years, and, thus, must be discovered at once, prior it reaches its peak, as these two wines above exhibited some really interesting and enjoyable features.

Or, these two wines are amongst some of the exceptions of this particular vintage, 1978, which, in Bordeaux, was nicknamed "the miracle vintage" due to a beautiful September, which saved the "Millésime", while most producers were expecting the worst, yet, it ended up not being so bad after all, even producing some rather fine wines for some Chateaux. Trying more Bordeaux 1978 should give us the answer.

Louis Roederer and Philippe Starck Brut Nature Blanc 2012
Nice, dry, crisp, elegant and playful, racy and well structured. Lovely.

Dom Perignon Vintage Brut 2010
Bigger and richer than the previous one, more complex and layered. Generous and   youthful. A bit young in my opinion, I prefer Dom Perignon with a bit more age. 




Domaine Roulot Meursault 1er Cru "Clos des Bouchères" Monopole 2017
Not my first bottle in the last 3 months, and surely many more to come. I love this wine. Balanced, mineral, racy, great acidity, complex, rich, yet not heavy, elegant and refined, rather feminine. A little restraint, I like to open it about 30 minutes before serving + a quick decanting just before serving to give a boost.

Domaine Tortochot Chambertin Grand Cru 2012 
Beautiful expression of bright red cherry aromas mingling with mineral, earth, spice. Razor sharp acidity, on the light side, yet focus, structured and textured. Need some air to really express itself, open it about 1 hour before serving.

Château Lafleur Pomerol 1983
Beautiful wine, love it. Elegant, refined, feminine, bright, crisp, complex and seductive. So youthful, this wine could easily age gracefully for another 10 to 15 years. The secret behind it, is the acidity. As I like to say, warm vintages in Bordeaux give ripeness, opulence and richness, while cooler vintages bring the necessary acidity and tannins to allow the wine to keep its youthful character and live through time. For example, some 1982 Bordeaux reached their peak already, while some 1983, like this one, will continue to live and evolve for a little while longer.

Intense dark golden color, rich, opulent, concentrated and very aromatic: ripe stone fruits, honey, quince fruit, spice, mineral. An explosion of flavors. Love it.

Sunday casual white wines



Last Sunday, some friends came to eat in the afternoon. We started with some beers and charcuterie for the "apéro". Then, we drank these 3 whites, sipping while cooking and eating "crêpes salées" (savoury crêpes or what was supposed to be "galettes") the whole day, from right after we finished the apéro, roughly from around 4 in the afternoon until they left around midnight. It was fun. 

More especially, that we tried first to make the crêpes with "whole-wheat" flour bought by my friend, who thought that it was the same as the one used in Britanny (Bretagne) to make the "galettes", except that galettes in Britanny are made with "buckwheat", not "whole-wheat".  So, we ended up with some kind of a weird liquid with some lumps of grains floating around, resulting in something similar to "oatmeal" in milk for breakfast. Once into the pan, the substance turned into a doughy disaster looking like a bizarre blob.  

After 2 attempts, I told my friend, the consistency is not good, something is wrong. We blamed it on the pan and the flour. I poured the liquid blob into the sink and, this time prepared the crepes concoction with regular white flour and my own recipe (which include rum and beer).  And ended up making:       
  • Crêpes with ham, mushrooms, cheese and egg. 
  • Crêpes with smoked salmon and mascarpone, lemon. 
  • Crêpes with camembert, mushrooms and emmental.

After the beers for the apéro with the charcuterie, we opened the following wines (in this order) to pair with the crêpes:  


Drouhin Vaudon Petit Chablis 2018 - Burgundy, France (@maisonjosephdrouhin)
Grape variety: 100% Chardonnay
Price: €14-17 (HKD 130 - 157)

Nice, fresh, medium-bodied, great balance and nicely coating the palate, ample and generous without being heavy, with substance and texture, yellow fruits, mineral notes, with a dash of oak treatment to add dimensions and volume, as well as a delectable buttery taste. Lovely. Nicely done and very satisfying.

Villa Sparina Gavi - Piedmonte, Italy 2019  (@villasparina)
Grape variety: 100% Cortese
Price: €11-14  (HKD 100-130) (around HKD 160-180 in HK, weird...)


Always a great value for money, I love this wine. Crisp, fresh, elegant, subtle, mineral, zesty, with great acidity adding both intensity and tension to this great little wine. Lots of minerals, and a barely perceivable pinch of saltiness. I love this type of light and racy whites made between the mountains and the sea. So light, vibrant and refreshing. I could drink tons of this wine. 

I used to buy and sell a lot of this specific wine when I was working as a "caviste" in the rich neighbourhood of Brooklyn Heights (NYC). It has been one of my favorite summer whites for nearly 2 decades.    

(But, I must admit that I love mountainous whites from pretty much anywhere around the Alps, Northern Italy, but also Switzerland and France too of course, and Austria. Same around the Pyrenees too). 😋😁

Chateau Haut Bertinerie Blanc - Blaye, Cotes de Bordeaux, France  2018 (@chateau_bertinerie)
Grape Variety: 100% Sauvignon Blanc (old vines)
Price: €13-16 (HKD 120-150)

As I am from a little village located between the Côtes de Bourg and Côtes de Blaye, I was eager to taste this wine, as it is from the region where I grew up. And I know the red, but never tried the white before. 

The colour was already light gold, (and much more pronounced than the previous 2 wines, despite the vintage), which is usually a sign of good intensity but could also be a sign that the wine has evolved already (not always a good thing for white Bordeaux, trust me on that). 

Overall, medium to full-bodied, quite rich and generous, layered, nicely made and well balanced. Yet, it appeared slightly heavy for my taste/palate. Especially after drinking two rather dry and light wines, it almost tasted fruity sweet and very ripe (definitely heavier and fuller too). The oak treatment is noticeable, yet integrated, and add dimensions and volume, but also weight. Quite intense and fat. 

It is a personal opinion, but it tasted more like a "wintery" white for me. Surely very comforting when it is cold outside, but definitely too heavy for my palate to really be enjoyed during the summer months, more especially with the heat and humidity here in Hong Kong.   

I must be honest, it was not what I was expecting, yet, it is well made and tasty, and still, it remains a great value for money at this price. Consequently, my advice is: to drink it if you like a heavier style of whites, even during summer, or keep it in your cellar or wine fridge (or wherever you keep your wine) for the Fall and/or Winter, to be paired with white meat and creamy sauce, or a well seasoned roasted chicken.
