LeDomduVin: A "Whistling " Selection!



A "Whistling " Selection! 




I could have written an "impressive" selection, but I preferred using the word "whistling" instead, as an adjective, referring to the sound we sometimes make when we are really impressed. 😁👍🍷😙🎵🎵

I recently selected and served these wines at a private dinner, and they were absolutely delicious. 😋😋😋





Louis Roederer Cristal Champagne Brut 2015


A blend of 60% Pinot Noir and 40% Chardonnay, Cristal 2015 is beautifully crafted, fresh, elegant, mineral, and highly refined. The blend is a subtle combination of the three emblematic vineyards of the house: one-third from the vineyards of "la Rivière," one-third from "la Montagne," and one-third from "la Côte." The crus used to make this exceptional champagne are Verzenay, Verzy, Beaumont-sur-Vesle, Ay, Avize, Mesnil-sur-Oger, and Cramant. Vinification takes place in wood for 25%. There is no malolactic fermentation. The dosage of this Brut Champagne is 7 grams per liter.

A beautiful, radiant, pale golden yellow color. It features lively bubbles and displays great finesse. The nose reveals vibrant, concentrated aromas of yellow fruits (white peach and mirabelle plum), with hints of hazelnut and roasted almonds. The palate is fresh, generous, and rich, with a silky texture that unveils notes of preserved citrus fruit and hints of spices. The palate emphasizes freshness and precision, culminating in a finish that features subtle woody and saline notes, resulting in a lovely blend of finesse and concentration. Love it! 






Fontaine-Gagnard Batard-Montrachet Grand Cru 2020


Fontaine-Gagnard represents a genuine Burgundian romance. The tale began in the 1980s when Richard Fontaine married Laurence Gagnard. Since 2007, Celine Fontaine has increasingly taken charge of winemaking from her father, leading to a remarkable rise in the quality of the wines in recent years.

Domaine Fontaine-Gagnard has experienced an incredible rise in quality and reputation over the past decade. The wines exhibit fantastic purity and minerality, combined with a delightful weight and richness of fruit. This is a very sophisticated and stylish Domaine producing some of the most coveted wines from Chassagne-Montrachet, showcasing a remarkable intensity of fruit that beautifully conveys their outstanding terroir.

The Batard-Montrachet 2020 is an outstanding wine that combines elegance, refinement, and generosity with complexity and richness. It showcases a captivating pale golden color in the glass. The nose is exuberant and enticing, featuring aromas of white and yellow fruits mingling with buttery and toasted nuances, all enhanced by great minerality. The palate is gorgeous, generous, and creamy, extremely well-balanced and focused, with no harshness whatsoever. It is complemented by that unmistakable waxy mineral sensation that coats the palate from the attack and gently expands through to the seamless, lingering finish.  What a wine! Superb!    






Benjamin Leroux Griotte-Chambertin Grand Cru 2018 (Mag)


Often referred to as the natural heir of Henri Jayer, Benjamin Leroux is one of the discreet rising stars crafting outstanding wines from village to Grand Cru levels, demonstrating a profoundly classic Burgundian style with a delightful, refreshing twist. His wines are classic in that they are not huge powerhouses, overly oaked, or excessively extracted. On the contrary, they blend freshness, elegance, silky texture, focus, and refinement in a soft, precise, and delicate manner.

At the age of 24, Benjamin Leroux assumed winemaking duties at Domaine Comte Armand, stepping in for his mentor, Pascal Marchand. This was a significant challenge for a young winemaker. Nevertheless, his inaugural wines in 1999 were hailed as the highlights of the vintage. Following his tenure at Comte Armand, he shifted his focus to his own winery in Beaune, where he runs a small négociant operation.

To produce his wines, Benjamin Leroux sources grapes (never juice or wine) from his vineyards and those of others, always selecting vineyards that practice over 50% organic viticulture and adhere to specific viticultural and environmental standards. Not one to shy away from challenging traditions, Benjamin Leroux also uses screw caps on some of his entry-level wines, ensuring that those intended for early consumption remain fresh and lively. 

As a Negociant rather than a vineyard owner, Benjamin Leroux's wines are highly sought-after by connoisseurs and sommeliers due to their limited quantities. His balanced, fresh, and versatile wines perfectly pair with all kinds of dishes.     

Benjamin Leroux's Griotte-Chambertin production is quite limited, with only one 450-liter barrel produced in some years (approximately 600 regular 750ml bottles, though often less since he also produces some magnums). This Grand Cru vineyard is among the smallest in Gevrey-Chambertin, with Leroux's vines located in the upper southern section. Leroux's contract for this vineyard concluded with the 2022 vintage, marking it as the last vintage of this wine under his winemaking. 

In 2022, I was fortunate enough to purchase two cases of six magnums of the 2018 vintage. I bought them more by instinct rather than knowledge, as I had heard of him but was not really familiar with his wines at the time, as I had never had the chance to taste them before. I opened two of these magnums for a private dinner back then, and they were the highlights of the night, with guests praising the wine's quality.    

A few days ago, at another private dinner where I opened the wines mentioned in this post, I had the opportunity to open another one of these magnums, and the wine had improved even more over the last three years since I acquired it.  

Leroux's Griotte-Chambertin 2018 in magnum is a masterpiece of elegance and silkiness. In the glass, it shows a discreet, medium-intensity garnet color. The nose is quite charming and unassuming, almost shy yet delivering very "à propos" fresh aromas of "griottes" (wild red cherries) and other red berries, mingling with fresh mineral, hearty, and floral notes. The palate is light and fresh, soft and silky, enhanced by excellent acidity, with an implied elegant complexity and delicate texture, even if not exuberant, inherent to most of Leroux's wines. This Griotte-Chambertin, like most of Leroux's wines, is sharp, precise, focused, and sophisticated. It was even more expressive after 45 minutes of being opened.  Loved it! 

      




Château Haut-Brion Pessac-Léognan 1998


No introduction is needed for this illustrious Chateau, which, as I have expressed so many times on this blog, is my favorite Bordeaux wine. The nose is fragrant, filled with intoxicating aromas of dark fruits and berries, including plum, as well as notes of forest floor and mushroom, mingling with those of oak, cigar, liquorice, and spices, alongside characteristic hints of tar and smoke. The palate reflects the nose’s flavors with greater intensity. It offers a medium to deep, layered, and complex character with a chewy texture, remaining lively and youthful due to its great acidity. It is well-structured with present yet integrated tannins. The lingering finish is earthy and presents tremendous potential for further ageing. This 1998 vintage is one of my favorites from the 90s, which has evolved beautifully over the past decade and promises to stand the test of time for many years to come. After about an hour, it became even more delightful, with additional secondary and tertiary notes, and a lot more licorice. What a beauty!

(totally oxidized, old)

Domaine Comte Georges de Vogüé Musigny 1991 (1.5L)
(benefitted from the magnum size, good but not great, yet not that bad for a poor to average vintage in Burgundy)

Château l'Eglise Clinet Pomerol 2010
(really nice, loved it)

Dom Perignon Vintage Rosé 1985 (1.5L)
(still alive and kicking, very nice, it also benefitted from the magnum size)

Domaine Joseph Roty Charmes-Chambertin 2016
(magnificent wine, excellent)

Domaine Ponsot Clos de la Roche Vieilles Vignes 2019
(one of my favorite wines of these past few years, love it, still very young)

LeDomduVin: Another "Trio de Choc"




Another "Trio de Choc"



I opened, tasted, and served these bottles over the weekend.





Louis Roederer Cristal Champagne 2012


Compared to the 2015 vintage I opened a few days ago, which was dry, crisp, light, and zesty, the 2012 is an absolute powerhouse: generous, opulent, rich and dense, complex and layered.

A blend of 60% Pinot Noir and 40% Chardonnay, this superb champagne offers rich and complex aromas of yellow and stone fruits mingling with warm toasted brioche notes and mineral nuances, developing from the nose to the chewable lingering finish. Absolutely loved it!

Where I found the 2015 needed some food, like oysters, the 2012 is a complete meal on its own. So satisfying!





Vincent Dancer Chassagne Montrachet Premier Cru "Tete du Clos" 2014


It was my first time tasting this wine, and this producer, I did not know.

It boasted a rich, deep yellow color. The nose was also rich and intense, displaying stone fruits, yellow apples, wheat, and stony earthiness combined with a haystack's “farm” scents. The palate was dense and ample, textured and structured, with the same aromas as on the nose, yet amplified by a saline, savory note. This wine was both interesting and intriguing.

It tasted like some of those "natural" wines. These barnyard, farmy notes are surely the result of his organic vineyards and hands-off approach in the cellar. His wines are fermented with wild yeasts, aged in barrel for 12-18 months, and bottled without fining or filtration. Tasting this wine triggered the need to taste more of his wines.






Domaine Tortochot Chambertin Grand Cru 2015


In the late 1990s, Chantal Tortochot-Michel took over from her father, Gabriel. She revitalized the estate and improved the winemaking processes to produce a range of vibrant, complex, yet approachable, fruit-forward wines that have the potential to age well.

This 2015 was an ode to the prestigious Chambertin vineyard. Advanced, light brownish color in the glass. Expressive nose, boasting aromas of black and red berries, licorice, and leather, with hints of spice and earth and mineral nuances. The palate is smooth, silky, leathery, earthy, well-balanced, and long. Loved it! It is a "classic" Burgundy.

LeDomduVin: Cristal 2015, Droin Hommage à Louis 2021 & Haut-Brion 2008





Last night's wines: Cristal 2015, Droin Hommage à Louis 2021 & Haut-Brion 2008



I opened and served these wines for a private dinner.





Louis Roederer Cristal Champagne 2015


Light, refreshing, crisp, with razor-sharp acidity, it is satisfying but better with food (oysters, for example).





Jean-Paul et Benoît Droin Chablis Grand Cru "Hommage à Louis" 2021


Strangely, I would have loved to like it, but I found it a bit dull and lacking in substance, with a short finish. It's definitely not up to the standard of a Grand Cru, in my opinion. Too bad. I will need to revisit it with a new bottle to check if it was just a problem with this particular bottle.

PS: For those who did not know this Cuvée from Droin, it is a special Cuvée. It is supposed to be the pinnacle of Droin wines and one of Chablis's finest grand cru Cuvée. The name pays homage to "Louis Droin", who bought this plot in 1920. It was used for the first time for the 2020 vintage. It is a plot on "Les Clos" adjoining "Valmur", so normally It should be beautiful. And I like their wines in general. But this particular bottle, no. That's why I said I should taste it again; perhaps it was a bottle that suffered. However, the cork was good, as was the appearance and the nose. On the other hand, the taste was really disappointing: no substance, complexity, or length in the palate.




Chateau Haut-Brion Pessac-Léognan 2008


My tasting is biased because Haut-Brion is my favorite Bordeaux wine. Yet, again, it showed wonderfully. I loved it. It was opened for 1h30 before serving, and there was no decanting. It was perfect. It was so smooth and silky yet textured and structured, complex and rich yet elegant and sophisticated. It was really pleasurable.

LeDomduVin: Nice Combo!





Nice Combo! 


That night was a lucky night! I had planned only on a Champagne (Cristal 2012) and a red (Pichon Lalande 2015), as requested by the host.

Yet, one of the guests brought more bottles of wine, amongst which I chose the Armand Rousseau Charmes 2012 and Gruaud Larose 1982.

Never miss an opportunity to indulge in and taste rare and expensive wines when it presents itself, right? And they were terrific. It was really a lucky night. 





Louis Roederer Cristal 2012

A blend of 60% Pinot Noir and 40% Chardonnay, first vintage produced from 100% organically farmed fruit, vinified without malolactic fermentation and disgorged with 7.5 grams per liter dosage, Cristal 2012 is a masterpiece! It displays enticing aromas of stone fruit, peach, lemon, and honey, mingling with floral, mineral, and toasted nuances. The refined palate is rich, full, concentrated, structured, and textured, nicely expanding from the attack to the long finish. Loved it.






Armand Rousseau Charmes Chambertin 2012

This is a stellar wine! Combining freshness, richness, and complexity with elegance and sophistication, refined structure, superb acidity, seamless texture, and outstanding balance. It is a perfect example of luxury, refinement, and elegance all in one bottle. Very impressed!






Pichon Lalande 2015

Served after the stunningly expressive Rousseau, it, unfortunately, appeared shy and tight, almost faded and lacking. Fortunately, 2 hours of decanting helped it to open up and show its potential. Nice, even if a bit young. Give it a few more years.





Gruaud Larose 1982

This was the cherry on the cake! Some 82s I tasted in recent years showed signs of weakness and decline. But, despite its old and cloudy appearance and advanced tertiary aromas and flavors, it was in perfect condition, alive and kicking, amazingly youthful, and still with plenty of balance, texture & structure. Wow!

LeDomduVin: Louis Roederer Brut Vintage 2013





Louis Roederer Brut Vintage 2013



Beautiful, light, and crisp, with enticing zesty, white fruits, floral, and mineral notes. Great balance. Refreshing acidity. Long seamless finish. Sophisticated yet friendly, approachable, and extremely easy to drink. Like a ballerina gracefully dancing on your tong. What a delightful champagne!

Compared to the 2012 vintage, which was richer, denser, and more layered, 2013 is surprisingly refreshing, bright, light, and so satisfying. Loooove it. 

And they say, "Bigger is better", well, it is definitely true when it comes to Champagne. In my experience, magnum size usually tastes better and fresher than a regular bottle, which is definitely the case for this one. Get it in magnum if you can, as one bottle won't be enough.

LeDomduVin: La dernière bouteille de "Brut Premier"





 La dernière bouteille de "Brut Premier" 



Certains lisent dans le marc de café. Je lis dans le vinaigre balsamique baignant dans l'huile d'olive. 

Perdu dans mes pensées, le regard dans mon assiette à pain, la silhouette d'une bouteille et d'une coupe se dessinaient dans cette flaque brune cerclée d'une aura jaunâtre. 

L'appel du champagne était indéniable et je ne pu lui résister... 

Ses bulles m'égayèrent l'esprit. Sa minéralité adoucit mon anxiété naturelle et son acidité me rafraichit les idées, me rendant plus lucide, me rappelant à la réalité, prêt à reprendre la conversation avec la tablée, que j'avais quittée l'espace d'un instant où mon esprit s'était égaré. 

C’était une bouteille de Louis Roederer « Brut Premier ». Peut-être l’une des dernières sur le marché, car « Brut Premier » a été abandonné en 2021 et a été remplacé par « Collection », une cuvée numérotée qui a une expression légèrement différente chaque année, et dont la dernière porte le numéro « 244 ». 

J’eu plaisir à la boire en compagnie des autres convives à la table et l’accompagner dans son dernier voyage avant qu’elle ne tombe dans l’oubli. 

D’ici quelques années, peu se souviendront de « Brut Premier », seule « Collection » restera dans les mémoires. 

Et si ce reflet dans le vinaigre, c’était sa façon a elle de dire que même dans l’ombre elle sera toujours là, ayant était d’une certaine façon l’inspiration première à l’initiative de ce qu’est devenue « Collection ». 

Adieu « Brut Premier » et merci pour toutes ces années de bonheur des papilles gustatives.

LeDomduVin: The Classics - Louis Roederer Cristal 2002 and Claude Dugat Chapelle Chambertin 2018

 



The Classics


The other day I felt privileged to open, taste and serve these 2 bottles from producers that I consider "Classic" in my book.

"Classic" may mean a lot of different things, yet, for most people, it means "to be of the highest quality and outstanding of its kind." Especially when proven many times over and over a certain period of time.

And, in my opinion, these 2 producers are "classics" in their respective regions.

Louis Roederer's "Cristal" is a timeless Champagne that has defied time and history, and requires no introduction as its reputation is second to none.

This Cristal 2002 was delightful, charming, grand, and noble. Beyond its still youthful pale golden color, it boasted fresh and enticing aromas of toasted brioche and yellow fruits with floral and mineral nuances, in a very elegant manner. The palate is rich and creamy, smooth and graceful, generous and sensual, and endowed with a very nice acidity allowing this champagne to remain young, fresh, and refreshing on the palate. Blindfolded, I'm sure many would give him much less than his current age of 20 years old. Stunning!!!

And, Claude Dugat does not need any introduction either, being one of the few "cult" producers of Gevrey-Chambertin, as well as being the cousin of Bernard Dugat, the owner of the Famous Domaine Dugat-py.

It is almost a sacrilege to open a bottle of 2018 vintage when you know that Claude's wines can last for decades. Yet, nowadays, everything goes fast, people cannot wait and people don't have patience either, everything has to be now.

Fortunately, this 2018 Claude Dugat Chapelle-Chambertin showed fantastically well and was even quite impressive to my palate.

You know the type of wine that when you drink a sip of it you immediately feel a sense of pleasurable satisfaction and the only thing you want is to pour yourself a full glass, knowing already that one bottle won't be enough. Well, that was it!

Definitely one of my favorite Chapelle Chambertin!!!

LeDomduVin: Food Pairing



Food pairing 


When it comes to private dinner, I (and most Sommeliers I know) prefer to go with food pairing, meaning "one dish -  one wine". 

As, it is usually easier to match the aromas and flavors of the wine with the food of one dish, or vice versa, depending on how you proceed. 

And, for a menu with 5 dishes, for 4 to 6 people, for example, I usually end up choosing a line up of wines including a Champagne to start with, then 1 or 2 whites, followed by 1 or 2 reds, depending if I can keep the same wine for 2 dishes or not. 

However, for this Monday's private dinner with a 5 dishes menu, the host decided to go with only one champagne and one red within a certain price range and amongst his own collection. 

Not an easy task as I was restricted by both choice and price. Yet, I was up to the task and ready for the challenge, and finally picked out: 

@louisroederer_ Cristal 2014, that I had never tried before, and ended up being stellar (always a good excuse to try something new 😁👍🥂🍾), and,

Domaine Claude Dugat Gevrey-Chambertin 1er Cru 2018, which was delightful and versatile enough to gracefully complement the food (both fish and chicken). 

Both wines were a real treat and great expressions of Pinot Noir too (*). The food was apparently really good too (it sure did look good on the plate 😍😋). The host and his guests were very pleased. 

I was relieved and could pat myself on the back for having had the flair, (once again), to have selected wines that paired well with the various dishes, and contributed a little to the success of this dinner.

At the end of the day, this dinner proved to me that, once again, when selecting wine for a food pairing, knowledge, experience, and skills are important, as well as knowing the ingredients of the menu and the various dishes, yet, the Sommelier's understanding and adaptability (to the host's demands) and the wine's versatility (to pair with various dishes) are the essential keys to a successful wine pairing (in my opinion).
