Domaine Perrot-Minot Nuits-Saint-Georges 1er Cru « La Richemone » Vignes Centenaires 2018

A classic in my selection. I have opened several bottles these past ten months and absolutely love it. 

Domaine Ponsot « Clos de La Roche » Grand Cru Cuvée Vieilles Vignes 2019

Another classic in my book. It is the one I opened for today’s private lunch, and damn, that is a gorgeous wine!!! A stunning beauty! 

Chateau Mouton Rothschild 2014 Premier Grand Cru Classé Pauillac 2014

From a lesser vintage (a “classic vintage”, as they say in Bordeaux), it was not my choice, but it ended up in the selection. I did not open it this time. And, anyway, it is still too young, and more time will do it good. However, if you want to open it, decant it for about 3 hours before serving it. It should soften the dry, firm, slightly green tannins still in the finish. 

Petrus Pomerol 1989

I did not open this one as it was given as a gift to one of the guests. However, I was lucky enough to have opened many bottles in the last 12 years (especially at my previous job for nine years). It is a stunning wine, and this bottle was in pristine condition with a high level. I inspected it carefully, and, for those of you who may wonder, it was a real one. It must have been reconditioned at the property in the past 15 to 20 years; otherwise, it is impossible. It is a rare sight, as there are not many left in the market (real ones, I mean, as many Petrus from the 80s were counterfeited, so there are probably quite a few fake ones still out there).

I love my job!

Mise en place for the week (2) 

This week will be fun as it is a full week for me, with dinners every night, weekend included. That means that I have to plan, source, buy, prepare, open, taste and serve different wines to all these dinners. 

I love when this happens as it is fun for me to make some selections according to the menus, buy the wines and have the chance to taste and serve them all. Looooove it. 

This is the primary job of a Sommelier like me. And when you get the chance to have access to such incredible producers and wines regularly, you can call yourself extremely lucky. 

That is one of the main reasons I love my job so much, as for the last 32 years (and many more to come, I hope), I have bought, opened, tasted, prepared and served some of the most outstanding wines in the world. 

Wines that I have never been able to afford for myself, yet my job has allowed me to access, taste, and occasionally even drink these wines. I love my job.

Mise en place for the week

Hibiki 17 Year-Old (2017 Edition) 

Discontinued in 2018, Hibiki 17 has become a trophy for whisky hunters. As the years pass, prices will soar, and this whisky will be hard to find. 

Krug Cuvée 170eme

Nice, light, crisp, fresh, mineral, and racy, it remains one of the best entry-level champagne in the market (despite its price) 😁👍🥂🍾

Louis Latour Batard-Montrachet Grand Cru 2016

Tasted a few times over the past year, it must breathe to fully reveal and express itself. Decanting is definitely suggested. Some slightly oxidative notes might also be present, yet I still find it interesting. 

Philippe Colin Chevalier-Montrachet Grand Cru 2019

Talented and terroir-driven, Philippe Colin makes stunning wines, and this Chevalier-Montrachet is a perfect example of it, ripe, generous, ample, complex and layered, yet balanced by enough acidity and minerality to keep it focused and precise. 

Château Palmer Margaux 2009

I love Palmer! And I have loved, bought, opened, tasted, served, and drank Palmer for the past 3 decades. I never get tired of it, and this 2009 is gorgeous. Surely one of the best vintages they made. Looooooooooove it. 

Vieux Château Certan Pomerol 2016

Back in 1997, I visited Pomerol and some of its Châteaux, including VCC, for the first time, and it was love at first sight. The tall, thin, and timid Alexandre Thienpont received us really well, shared his knowledge, let us taste at the barrels, and even opened a bottle, and the rest was history. VCC instantly became one of my favourite wines ever, and still to this day. Although this 2016 is way too young, it still drinks beautifully after one hour of decanting. Looooooooooove it.

The best thing about being a Sommelier / Wine buyer is to fill and refill the cellar (or wine fridge) with some of your favorite gems, as well as some classics, newcomers, and rising stars. Some “Grandes Dames” in need of TLC to be opened, prepared, and served for some upcoming lunches and dinners. In French, it is called the “mise en place”, basically being ready and prepared no matter what 😁👍🍷🍷🍷

So, basically, I need to pick a bottle for a host who will enjoy it while having a cigar with his guests, after dinner, tonight.
