LeDomduVin: Sympathetic Trio

Bruno Paillard N. P. U. (Nec Plus Ultra) Brut 2008


This exclusive champagne, from the exceptional 2008 vintage, is a blend of 50% Chardonnay and 50% Pinot Noir, sourced from Grand Cru vineyards. Beyond its light golden color, it possesses fine bubbles and boasts complex aromas of stone fruits and candied orange peel. The palate is soft, gentle, generous, and ample, coating the mouth nicely with a great texture and concentration, finishing with a long, chalky aftertaste. Loved it!





Jean-Claude Ramonet Chassagne-Montrachet 1er Cru "Boudriotte" 2018


When it comes to white Burgundy and Chassagne, Ramonet is definitely one of my favorite producers. I was really pleased and surprised by how fresh this "Boudriotte" 2018 was. The robe has a pale golden color with slightly green reflections. The nose is fresh, with enticing notes of pear and citrus rind, mingling with toasted bread and mineral notes. The palate mirrors the nose with elegance, refined texture, excellent structure, balance, vibrancy, and focus, culminating in a lingering mineral finish. Superb!






Chateau Pavie 1er Grand Cru Classe A Saint-Emilion Grand Cru 2016


I had not tried this wine in a long time, and although it was good, it was not as good as I remembered it from previous tastings. Maybe a down phase, but still definitely worth trying!

It was a good thing I opened it about 45 minutes before serving, as the nose was so timid and closed at opening; it definitely needed decanting.

A Blend of 60% Merlot and 40% Cabernet Franc, hailed from the excellent 2016 vintage, it combines freshness, elegance, and complexity in a light way. The robe is dark red, with garnet reflections. The nose expresses aromas of ripe red berries, cherry, and red currant, with floral, pepper, and cinnamon nuances. After the subtle attack, the palate is surprisingly fresh and zesty, rather than fleshy and concentrated, yet balanced and well-structured, with integrated tannins. Although I liked it, I would have loved for it to be more substantial, with less of the Cabernet Franc’s slight green pepper bitterness. Maybe just a down phase, as it still has the potential to age further and improve with time.

LeDomduVin: Quatuor

I forgot to post my tasting notes in my previous post, so here they are.




Champagne Jacques Selosse VO "Version Originale" Blanc de Blancs Extra-Brut NV (disgorged in Nov 2019)


Selosse makes rich and complex champagnes, and this one was no exception. Beyond its dense golden color, it displayed buttery, toasted aromas, with yellow stone fruits mingling with nutty, slightly oxidative notes, like a Sherry. The palate is rich, layered, complex, ample, and generous, with just enough freshness and minerality to keep it balanced and harmonious. Due to its color and nuttiness, some may say it is already too old, but that is not the case. That is just how this champagne is. The finish is long and lingering. I liked it, but some may find it a bit overwhelming.






Jean-Claude Ramonet Bienvenues Batard-Montrachet Grand Cru Burgundy 2018


Ramonet is one of my favorite producers in the Chassagne / Puligny area. The wines, with their zesty fruits, great freshness, and high minerality, have a sense of purity. And it was the case for this Bienvenues Batard Montrachet, a pure delight!






Mongeard-Mugneret Richebourg Grand Cru Burgundy 2019


It was way too young, but I could not resist opening it. Nice, bright, ruby color with medium-deep intensity. The nose bosted beautiful autumnal aromas of dark cherry, toasted oak, venison, flowers, and earth, with smoky nuances. The palate was tight at first, with bright red and dark cherry and high acidity. I usually don't decant Burgundy wines, but I had to decant this one to allow it to better express itself. It took a while to reveal itself. Although I loved it, it will definitely benefit from a few more years in the cellar to display its full potential.






Chateau Haut-Brion Pessac-Leognan Bordeaux 2016


I have opened this wine a few times lately. It usually shows really well, yet it was in a closed phase that night. For the tasting notes, you can have a look at my previous posts.

Mise en place - Part 2: Quartet




These were the second parts of the "mise en place" I did 2 weeks ago. 

I opened them for a private lunch that weekend, and they showed beautifully. 




Champagne Jacques Selosse VO "Version Originale" Blanc de Blancs Extra-Brut NV (disgorged in Nov 2019)


It delivered charm, character, intensity, and concentration with great finesse and beautiful minerality. In my book, it is a classic!






Champagne Salon Cuvee 'S' Le Mesnil Blanc de Blancs Brut 1996


Probably the most prestigious champagne house, Salon possesses unmatched uniqueness. Despite its age, it was gorgeously fresh and mineral, layered, complex, and long. Amazing! 





Jean-Claude Ramonet Bienvenues Batard-Montrachet Grand Cru Burgundy 2018


Ramonet is one of my favorite producers in the Chassagne / Puligny area. The wines, with their zesty fruits, great freshness, and high minerality, have a sense of purity. And it was the case for this Bienvenues Batard Montrachet, a pure delight! 




Domaine Anne Gros Richebourg Grand Cru Burgundy 2020


It is a sacrilege to open such a young wine, yet I could not resist. It was rich, complex, and layered, offering generously ripe dark and red fruits. The palate was powerful and ample yet elegant and sophisticated, balanced and velvety, expanding beautifully towards the seamless finish. Although approachable now, it will reward those with the patience to wait for it. What a magnificent wine!

Mise en place! What a line-up! 



I know, I constantly repeat myself, yet it is true: I'm one of the luckiest Sommeliers I know. 

I mean, look at these wines! Isn't it amazing? 






How many Sommeliers can pretend to prepare, open, taste, and serve such gems regularly? Not many, for sure.

Today's wines: July 17th 2022







Krug Grande Cuvée 170ème Édition NV

Bright, crisp, fresh, light, mineral, good zest of acidity, great balance, love it. 






Jean-Claude Ramonet Chassagne-Montrachet Premier Cru "Les Vergers" 2018

White and yellow flowers and fruits, with mineral and discreet wood ageing buttery, toasted notes. Glycerine sensation coating the palate, which gives it amplitude, texture and substance, yet without being heavy nor flabby as balanced by great acidity. Layered and complex in an elegant and gentle way. What a lovely wine! 






Château Haut-Bailly Grand Cru Classé Pessac-Léognan 2010

A very solar wine, full, ripe, generous, ample, layered, earthy, with dark fruits and berries mingling with oak nuances, nice balance overall and still a good grip of tannins, that could still use a few more years to round up. Still very young, and even a bit rough after 2 hours of decanting and cooling by leaving the decanter on ice for a short while to serve it at the right temperature. Quite long finish. A touch of alcohol somehow. Enjoyable, yet too young in my opinion, needs a bit of time to mellow some of the rough edges. 







Château La Mission Haut-Brion Pessac-Léognan 2005

I'm a bit biased on this one, as Haut-Brion and La Mission Haut-Brion are two of my favourite wines in the world. And yet again, this wine is so good, refined and elegant, that it would be difficult for anyone not to like it. Layered, textured, structured, balanced, complex, aromatic and seductive with a long finish. Great after two hours of decanting. Love it.
