LeDomduVin: Trio de Choc

Trio de Choc

A selection I made recently for a private dinner. You cannot go wrong with these 3. They are stellar wines and classics amongst their peers. Their combination is the perfect recipe for a successful dinner.

Krug Vintage 2008
Philippe Colin Chevalier Montrachet 2019
Perrot Minot NSG La Richemone Vignes Centenaires

Cheers! Santé!

LeDomduVin: Singing the praises of this wine or just thirsty? Domaine Humbert Charmes Chambertin 2018 (bis)

Are they singing the praises of this wine

or just thirsty?

😉👍🍷

Difficult to tell as in the first picture, they look like they are just thirsty and about to drink directly at the bottle, while in the 2nd and 4th pictures, one could easily imagine that they are singing. 😁

In any case, I fully understand them, as I could do both myself, singing the praises of this and drinking at the bottle. That's how good this wine is!!!

I know that I already described it in a previous post recently, but I had the opportunity to taste and serve it again recently, on a private boat, and it showed even better.

Domaine Humbert Charmes Chambertin 2018 displays of very attractive medium-deep garnet color. The nose boasts some dark and red cherries aromas, with some plumy, blackcurrant, and ripe strawberry notes, as well as earthy, smoky, and mineral nuances. On the palate, it was definitely less shy than the previous one (which, maybe, was slightly off), as this one immediately showed a lot of dark ripe fruits and earthiness, less rusticity, and more freshness and balance, as well as this mix of savoriness and saltiness lingering in the finish. What a lovely wine!

After 40 minutes, it revealed a different profile with riper and juicier dark fruits, more opulence and fullness in the attack, and the mid-palate, yet in an elegant manner. Delivering juicy fruit flavors, nice acidity, good focus, and balance, as well as more amplitude, structure, and texture in the mid-palate, leading toward a nice lingering finish, with earthy, savory (umami) and salty nuances, and that omnipresent smoky note. A very nice and well-crafted wine I must say!

It was a good idea to revisit this wine on a bright sunny day and serve it on the yacht. I think the weather and the environment suited it better.

I was proud of my choice (once again 😇), the guests were happy and even the sculptures were singing the praises of this wine. It was a beautiful day with plenty of good vibes.

Even the Krug Grande Cuvee 170th Edition was a delight.

Cheers! Santé!

LeDomduVin: Sunday Vibes

Sunday vibes

Like most Sommeliers, I work on weekends. Yet, my job is more fun than a regular Sommelier working in a restaurant, a hotel, or a wine shop, as, being a "Personal Sommelier", I get to work in various places, including boats, on weekly basis.

For example, Friday nights, I usually work at our Japanese restaurant. While the other days of the week, I may work in some of our other restaurants (French, Italian, Chinese, etc...).

I very much enjoy changing work environments, as it allows me to work with different teams, different types of cuisines, and menus, and prevent falling into the routine.

It is fun and exciting, and more appealing to my social chameleon personality, providing me the ability to blend into any social environment and to change outfits matching with the place. I have always loved to disguise myself.

Consequently, it allows me to select and buy wines to fit the various places, ambiances, and dishes, as well as the types of guests (regular, VIP, VVIP, etc...), and the mood or theme of the night too (casual, smart casual, dressed up, fancy, vintage, artsy, etc..).

On Sundays, I usually work on the yacht.

On one end, I work pretty much every day and I cannot see or spend much time with my kids, unfortunately (but I do not have much of a choice either).

Yet, on the other end, nothing compares with the work environment of working on a boat, especially when the weather is beautiful: the sun, the light, the sea, the panoramic views, the gentle lapping of the waves, the peace and quiet of being far from the constant noises of the city, etc...

Sunday on the yacht is a welcome weekly breeze of fresh air.

Krug Grande Cuvee 170eme Edition

A blend of 195 wines from 12 different years (youngest 2014, oldest 1998), 51% Pinot Noir, 38% Chardonnay & 11% Meunier. Released only after 7 years provides the 170eme with its distinct clean, fresh expression and elegance. Although, less rich or complex than the 169eme Edition, it compensates for it by being fresher and friendlier. Bright, pale golden color, fine mousse, and bubbles, with aromas of apple, yellow stone fruits, and white and yellow flowers, complemented by mineral and toasted nuances. Fresh and gentle, delicate and elegant, playful palate. I love it.

Chateau La Conseillante 2009

Dark, ripe, rich, earthy, and so youthful, it took 2 hours of decanting to express itself. Patience is needed. Yet, even if one can sense the ripeness of the fruit occurring on a warm vintage, like 2009, it showed beautiful concentration, complexity, and depth, with enough acidity to keep it fresh and lively, and a good core of solid tannins and earthy chewiness that may take time to integrate and better harmonize. It might be just a phase, but it seems that Bordeaux's 2010, lately, is more open and approachable at the moment than 2009, which is, in my opinion, more in a closing phase.  Let it rest for a few years in your wine fridge or wine cellar, it will greatly benefit from it.

Cheers! Santé!

LeDomduVin: Krug Vintage 1990

Champagne Krug Vintage 1990

I tasted it last Friday, shortly after tasting DP P2 2002, (*), and I must say that both were stunning Champagnes, yet totally different in so many ways.

Where DP P2 2002 is rich and complex, yet in a fresh, vibrant, sophisticated, and elegant way, (without necessarily being feminine), Krug 1990 brings power, depth, richness, and concentration, in a rather more masculine way.

A blend of 40% Pinot Noir, 37% Chardonnay, and 23% Pinot Meunier, from a vintage, often qualified as "exceptional", Krug 1990 perfectly reflects the complexity of this particular vintage. It has a beautiful, hypnotic, deep golden color in the glass. Enticing and appetizing nose filled with toasted brioche, roasted almond, pastry dough, dried stone, citrus fruits, and caramelized plum tart aromas. The palate is opulent, ample and rich, complex and layered, yet, fortunately, really well balanced by the acidity still conferring great freshness to this Champagne, despite his age and the ton of flavors coating the palate from beginning to end, which could have been overwhelming without this fresh note. The long and tasty finish is definitely calling for another glass. Although really enjoyable now, it still has the potential to age for many more years to come.    - Dom (11.11.2022)

Santé! Cheers!
